Watermelon Mint Salad and Watermelon Cucumber Cooler



Alright friends, we heard you! You wanted simple and today’s Bite N Bubbly couldn’t be more wonderfully watermelon(y) and SIMPLE. We’ve got a fresh mint watermelon salad that is the perfect side to any summer picnic and a delicious watermelon/cucumber cocktail that is so healthy you can have it as a juice or throw some vodka in it for some fun. Seriously, this cocktail could be sold for $12 at Whole Foods as a pressed juice, or you could just make it yourself for far cheaper. Let us know what you think!!!

Shopping list:
1 whole large watermelon
1 small package of mint
1 English cucumber
2 lime
Club soda or sparkling water


Watermelon Mint Salad
Watermelon + Mint. What could be simpler? You will be reaching for this quick salad for every backyard BBQ all summer long. Ice cold watermelon is one of my favorite things on a hot summer day. Adding chopped mint to watermelon is my secret weapon to it tasting like you just pulled the watermelon out of the fridge even when setting it out to feed family and friends!
Ingredients:
½ watermelon cubed
¼ cup chopped mint


Directions:
Cube watermelon and place in large bowl. Chop ¼ cup mint very finely. Add mint to watermelon and toss. Serve right away or store in fridge until ready to serve.

Watermelon Cucumber Cooler
This summer drink treat is refreshing and dare we say, healthy? The watermelon and cucumber packs a punch keeping you cool and hydrated in the sun.  
Ingredients:
4 cups cubed watermelon
12 mint leaves
½ English cucumber, peeled and diced
The juice of 1 ½ limes
Club soda or sparkling water
Optional: Vodka


Directions:
Place watermelon, mint, cucumber and lime juice into a blender and blend until liquefied. we typically let the blender (Vitamix) run for almost a minute at the highest speed setting. The blended juice should not have any texture once completely blended. Fill a glass with ice. Pour watermelon juice to fill half the glass. Fill the rest of the glass with club soda and enjoy!

Optional: Add a shot of vodka to bring this mocktail to the next level.

Pro tip: Store leftover juice in a water bottle or jar. Should keep for up about 4-5 days.
