Rack of lamb or chops
Bulb of Garlic
Bulb of Garlic
Dijon Mustard
Balsamic Vinegar
Can of Cherry Preserves
Rosemary Sprigs
Tequila
Diet Tonic/Seltzer
Salt
Pepper
Olive Oil
Sugar
1/3 cup fresh or canned cherries
1/3 cup sugar
2 sprigs rosemary (and partial spring for
garnish)
Splash of diet tonic (my favorite is
Schweppes)
First, combine sugar and cherries in blender
and pulse until combined.
In a cocktail shaker, muddle rosemary springs
and tequila
Fill cocktail glass with ice and spoon 1
tablespoon of sugar and cherry mix into the bottom (putting this in first
creates a pretty layered effect <3)
Pour tequila and rosemary mixture slowly over
the cherry mix Top with diet tonic
Garnish with rosemary sprig
Note: For an extra special garnish, dip rim of
cocktail glass in cherry juice and salt or sugar rim

garlic, finely chopped

tablespoon Dijon mustard
teaspoon
chopped fresh rosemary leaves
cup
balsamic vinegar
cup
cherry preserves
Fresh
rosemary sprigs, if desired

Wine, if desired
In small bowl mix garlic, chopped rosemary,
mustard, and salt and pepper. Place cut lamb chops in 1 gallon sized freezer
bag and rub sauce all of the lamb chops in bag. Place in fridge to marinate
while you make the glaze.
In a small sauce pan over low-medium heat,
place cherry preserves, balsamic vinegar and ½ cup red wine. Let reduce down
for 15-20 minutes.
While your glaze is
reducing, heat a medium to large pan and dust with olive oil. When the pan is
hot take coated chops and grill each side for 2-3 minutes or until browned. If
using a thermometer, 145
°F (medium rare),160 °F (medium), or 170 °F (well done).
Drizzle with reserved preserves mixture and
garnish with rosemary sprigs.
