Pina Colada and Easy Pineapple Fried Rice
Naturally sweetened Pina Colada and easy peasy pinapple fried rice on the menu today! Enjoy this week for the perfect tropical stay cation.
Ingredients:
1 fresh pineapple
2 tbsp vegetable oil
2 cups brown rice (pre-cooked, for a super simple option you can
do microwave rice. I have a rice cooker
that is just as easy)
2 chicken breasts - diced
Soy sauce
½ small onion – diced
1 garlic clove or 2 tsp of crushed garlic
1 cup broccoli – chopped (roughly a small head of broccoli)
1 red bell pepper – chopped
2 eggs
3 green onion
1 tsp sesame oil
1 cup Coconut milk unsweetened (can)
½ cup Coconut cream (can)
½ cup Pineapple juice
2 cups ice
½ cup Rum

½ cup Pineapple juice
2 cups ice
½ cup Rum

Pina Colada will keep you looking hot in that swim suit or cold in that
sweatshirt your secretly sitting in inside your Seattle house (like us). The secret
ingredient to making this sugar free Pina colada still sweet the canned coconut
cream.
Instructions:
In
a blender, blend all ingredients except the ice until smooth. Add ice and blend again. If it is too thick
add a little more pineapple juice.
Garnish
not optional: a small decorative umbrella and bendy straw.
Pineapple
fried rice with chicken
2 tbsp vegetable oil
2 cups brown rice (pre-cooked, for a super simple option you can
do microwave rice. I have a rice cooker
that is just as easy)
2 chicken breasts - diced
Soy sauce
½ small onion – diced
1 garlic clove or 2 tsp of crushed garlic
¾ cups pineapple
1 cup broccoli – chopped (roughly a small head of broccoli)
1 red bell pepper – chopped
2 eggs
3 green onion
1 tsp sesame oil
First heat up a wok or frying pan with 2 tbsp oil until very
hot, almost smoking. Add chicken and cook until done. Set aside.
Keeping the stove at medium high heat, add a little more oil if
needed. Add diced onion and pineapple and cook
about 2 minutes or until it starts to brown. Next toss in pressed garlic and
grated ginger and sauté another minute, stirring constantly. Add in the broccoli,
red pepper and let cook for a minute. Add in the rice and let it start to
brown. Scoot the rice veggie mixture to
the outer sides of the pan and scramble the two eggs in the middle of the
pan.
Fold all ingredients together and
add back in the chicken. Heat until the
chicken is warm. Remove from heat, add
the sesame oil, and chopped green onion. Serve and enjoy!
