Collard Green Wrap and Sprtiz
Today we are keeping
things simple and oh so fresh! We are rolling up the friendly cousin to the
lettuce wrap -- a collard wrap! These huge leafy greens are packed with
tons of nutrients and make for the perfect on the go lunch. You can throw
basically any veggie and hummus combo in these wraps and we made ours with the
ingredients we had on hand from our fresh Pacific Coast Harvest box!
Makes: 2-3 wraps
Ingredients:
2 - 3 Collard Greens
1/2 cup Hummus (any
flavor!)
1/3 cup carrots
1/3
cup cucumbers
1/3
cup purple sprouted broccoli
1/3
cup radishes
1/3
cup mango
Optional: Lime wedges
Prep: Wash and dry all
produce. Chop all veggies into 2-inch-long sticks. Trim the main collard green
stem and use a paring knife to shave down the spine (this makes it easier to
roll).
Lay collard leaf on a
flat surface. Spread 2-3 tablespoons of hummus around in the middle of
the leaf. Fill each leaf with equal amounts of veggies. We like to
squeeze a wedge of lime over the veggies to keep them extra fresh, but it is
totally optional :). Wrap your leaf up like a little burrito, slice in
half and enjoy!
For our bubbly, we like to keep things simple and add a few of the extra cucumber slices and lime wedges to a glass of sparkling water or a flavored LaCroix.
