Caipirinha Cooler and Mango Shrimp Guacamole




Today's Bite n Bubbly was made because we have several delicious limes and mangos from our buddies at https://pacificcoastharvest.com/.It's also sunny, Monday, and we want a cocktail on the patio post work. 

The drink is a spin on Brazil's national cocktail: Caipirinha.  It is so refreshing that it is easy to forget it has a serious kick!  We top this classic off with an extra bit of sugar and a splash of bubbly. 

The dip I first tasted when a friend brought a variation to a 4th of July party years ago; her dip was the biggest hit there and I was a total peanut-butter and JELLY sandwich. That is until Collena shared the recipe with me. :) This dip is everyone's favorite, including my boyfriend who tells people it's his "favorite(meal)I make." At first, I was offended thinking to all the times I've stuffed lamb or decorated cakes for hours, but then I realized simple, delicious, and with love always wins. :) Cheers to you and yours!

Caipirinha Cooler

Makes 2 drinks:Ingredients: 1 lime4 teaspoons raw sugar3 ounces of Cachaca Club soda/ Tonic

Juice limes into a glass and dissolve in sugar.  Add ice to the glass and pour in the Cachaca. Give it a light stir and top with club soda or any bubbly of your choice.  

Bartenders Tip:  We like serving these up extra cold in a copper cup with a lime wedge

Shrimp Mango Guacamole



2-3 Mangos, ripe and diced
4 limes, juiced
½ pound pre-cooked salad shrimp
1 bunch cilantro, diced
4 garlic cloves, diced
Salt and pepper to taste
4-5 avocados, diced

Combine diced mangos, lime juice, shrimp, diced cilantro, diced garlic, salt and pepper. When mixed well, add diced avocado and gently mix all together. Enjoy with tortilla chips!
