A Simple St. Patty's Day Feast




Hi friends! Happy St.Patty's to all of you! This week Monique and I have a full St.Patty's day weekend so we wanted something easy, yet quintessentially Irish. Please meet our lovely friends: corned-beef, cabbage, and Guinness. Those who haven’t made corned beef and cabbage don’t realize how easy it is! Buy any corned-beef from your butcher with a seasoning packet, throw in some vegetables and water, and voila! You’ll have your friends thinking you’re a green-goddess in no time. Pair with a Guinness (or two) and you'll think you're pretty great too. ;)

Cook Time: 3 hours
Total Time: 3 hours 7 minutes

Grocery List:
1 head of cabbage
5 medium/large carrots
10 red potatoes
4 cloves of garlic
4 bay leaves
2 lbs of corned beef (most come pre-seasoned)
6 pack of Guinness beer

Simple Corned Beef and Cabbage


(serves 6)

1 head of cabbage
5 medium/large carrots
10 red potatoes
4 cloves of garlic
4 bay leaves
2 lbs of corned beef (most come pre-seasoned)
1 Guinness beer


Place corned-beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef, the garlic, bay leaves and 1 bottle of Guinness. Let the corned beef cook for about 2 hours. Add whole potatoes and carrots and cook until the vegetables are almost tender- about 45 minutes.  Add cabbage and cook for 15 more minutes.  

Serve with mustard and a cold-frothy Guinness!

Editor tip: place beer glasses into the freezer ahead of time for an ice-cold glass.
